Cooking Class #2: Jamaican Jerk Chicken Salad

Laura treated me to a Valentines Day lunch today with a very odd sounding salad, Jamaican Jerk Chicken Salad, but it tasted wonderful.

Jamaican Jerk Chicken Salad

Here is the recipe:

INGREDIENTS:

1/2 cup prepared or purchased honey-mustard dressing
1 teaspoon finely grated lime zest
4 chicken breast halves without skin, boneless
1 tablespoon Jamaican jerk seasoning
2 large fresh mangoes
10 to 12 cups mixed greens

PREPARATION:

Stir together honey-mustard dressing and lime zest. Cover and chill dressing while preparing chicken.
Rinse chicken and pat dry; sprinkle with the jerk seasoning In a large skillet cook the seasoned chicken in hot oil over medium-high heat about 6 minutes on each side until browned and no longer pink.

Arrange warm chicken and mango atop greens on four plates; drizzle with the honey-mustard dressing.
Serves 4.

We couldn’t find the Jamaican Jerk Seasoning in the store, so we looked up how to make our own:

INGREDIENTS:

2 tablespoons dried minced onion
2 1/2 teaspoons dried thyme
2 teaspoons ground allspice
2 teaspoons ground black pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
2 tablespoons vegetable oil

DIRECTIONS:
In a small bowl, stir together the dried onion, thyme, allspice, ground black pepper, cinnamon, cayenne pepper, and salt. Coat meat lightly with oil, then rub seasoning onto meat.

Try it! It was so tasty!

    That looks excellent. I am a huge mango fan and the meat looks like it has a very good covering of flavor.. nice job.
