Chocolate Eclair Squares

I like cookies, but I often like them to be very plain, like Vanilla Wafers.

Mom recently brought home some Vanilla Wafers, and I spotted what looked to be a delicious and easy recipe on the side of the box: Chocolate Eclair Squares.

Dismissing plain cookies for a while, Laura and I set out to buy the ingredients, and then we decided to make them when we knew we’d have a house full of people. Obviously we wanted to TRY them, just not to EAT them all!

These were a hit with our guests and here is the recipe:

INGREDIENTS (Serves 16)

  • 2 cups cold milk
  • 2 (3.4 ounce) packages JELL-O Vanilla Flavor Instant Pudding
  • 1 (8 ounce) tub COOL WHIP Whipped Topping, thawed
  • 64 NILLA Wafers
  • 2 squares BAKER’S Semi-Sweet Chocolate

DIRECTIONS

  1. Beat milk and pudding mixes with whisk 2 min. Stir in COOL WHIP.
  2. Arrange 16 wafers on bottom of 8-inch square dish; cover with 1/3 of pudding mixture. Repeat layers twice. Top with remaining wafers. Refrigerate 4 hours.
  3. Microwave chocolate in microwaveable bowl on HIGH 1 min. or until melted when stirred. Drizzle over dessert.
